My cousin makes incredibly fluffy cupcakes. I’ve tried unsuccessfully to convince her to go in to full time cupcake making but she prefers to pull them out for special party occasions. The ones pictured here were for my niece Ella’s 1st birthday which I managed to scoff 5 minutes before we were deluged by a wicked Queensland thunderstorm.
Thankfully if I ever move or go to Sydney there is a substitute on Pitt Street. Cupcakes on Pitt make a wide variety of flavours and constantly change them during the week. I suspect there is a huge market for them in Brisbane as well. I’d choose a cupcake over cake any day, so Fiona, if you ever choose to open a store, I’d be willing to invest!
